Stir fried chicken with peanuts

Peanuts are very good for cancer patients, as are all nuts, so I try and use them in all sorts of cooking. Luckily they are very prevalent in Vietnamese and Cambodian dishes, so its not difficult. This is another very simple recipe that you can knock up in a few minutes. I served mine with Cabbage with mustard seeds and cumin for a change, mixing Ayurveda with Vietnam – why not? But you could equally serve with any fried or steamed green veg green, and brown or white rice.

Stir fried chicken with peanuts

2 tbsp peanut oil
400 g/14 oz chicken breast, sliced
1  1/2 tbsp fish sauce
3 spring onions, sliced diagonally
1 large red chilli, the mild sort, sliced diagonally
1/2 cup shelled roasted peanuts (you can quickly dry roast them in the wok before you start cooking)salt and freshly ground black pepper

Heat the wok over a high heat and add the oil. tie fry the chicken for 4-5 minutes until almost cooked and beginning to turn brown. Add fish sauce, spring onions, chilli and peanuts and continue to fry until chicken and onions are tender and cooked through.

Add salt and pepper to taste.
