The perfect, healthy little salad for lunch. Papaya is good TCM food – lots of seeds- and has enzymes which aid digestion. Pomelo – or grapefruit if you can’t get pomelo – is very cleansing, especially if eaten in the morning, and helps regulate the pancreas, digest sugars and detox from too much booze! Avocado is high in nutrients and is good for the brain and liver, while bean sprouts are good for high blood pressure and infectious diseases! So there you go. This is so easy to make…and quite delicious. I don’t weight any of the ingredients, just add them as I see fit so the below is just a guide.
Papaya, pomelo, avocado and bean sprout salad
8 oz papaya, sliced and diced, or one great wedge
1 cup bean sprouts
1 whole pomelo or grapefruit, segmented without the pith and heard skin, and torn into pieces
1 avocado, diced
1 chilli, seeded and sliced
rocket leaves (optional)
a handful coriander and mint leaves
salt and pepper
2 tbsp fish sauce
Mix all the ingredients together in a bowl, then add the fish sauce. Hey presto!
Variation:
instead of pomelo, grate some beetroot; also if the fish sauce is too salty for you, just toss in a vinaigrette.
