Stir-frying the raw veg

I made this when I had a huge pile of rice leftover from a supper party. Very good for radiotherapy tummies! You can put in any vegetables apart from leafy green and brassicas – so aubergine, asparagus, red pepper, butternut – whatever you have in the fridge.

Serves 2-3

3-4 eggs
2-3 cups leftover rice
1 red onion, finely chopped
2 cloves garlic
3/4 inch ginger peeled and chopped
1 chilli, deseeded (optional)
2 carrots
1 courgette
2 tbsp groundnut oil
1.5 tbs light soy
1 tsp sesame oil to finish
coriander, spring onions and basil to garnish

First whisk the eggs. Then pour into a wok with 1 tbs of the oil and make an omelette. When not quite set, take off heat and cut into ribbons.

In another wok, or the same if you have taken the omelette out, add the remaining oil and quickly stir fry all the chopped veg together over a high heat. Add the soy sauce, the chopped omelette and stir around until all mixed up nicely. Serve and garnish.

No salad allowed as raw vegetables not good for radiotherapy!
