Thai green papaya salad

1 small green papaya, peeled, de-seeded and julienned
2 cups bean sprouts
10 cherry tomatoes
1 cup blanched green beans
2 tbsp dried shrimp (optional)
1/2 cup roasted peanuts or cashews

Dressing:

 2 Tbsp. fish sauce
3 Tbsp. lime juice
2 tbsp palm sugar
2 cloves garlic, finely chopped
1 red chili, sliced, seeds removed (reduce or omit, to taste)

Garnish:

1/2 cup fresh basil, leaves left whole or chopped

handful of fresh coriander

Whisk fish sauce, lime juice, palm sugar and garlic together.

Lightly crush garlic, tomatoes, green beans and chilli to release flavours. Set them aside in a large bowl. Add the whisked dressing, then the green papaya, dried shrimp, and toasted peanuts.
