Lunch-time quick salad

Mixed leaves of any variety, the more peppery the better
Handful of sprouts – mung beans, radish etc
1 grated carrot
½ grated beetroot

Add any or all of the following: hardboiled egg, ½ can tuna, some cooked quinoa, asparagsus,  avocado, chick peas, sesame seeds, radish, grated cucumber, cherry tomatoes (not for me), coriander, basil, mint – depending on your dietary choices

Mix with oriental dressing or, if you like it really spicy, some left over sweet/sour chilli dipping sauce or the dressing from the squid salad

Oriental dressing
 
3 tbsp light soy sauce
3tbsp rice vinegar
1 tsp sesame oil
15 g palm sugar
salt & pepper to taste
