Totally scrumptious, a new discovery in one of my favourite dim sum restaurants Din Tai Fung…and it couldn’t be simpler. Quite by chance I spotted the pea shoots in the supermarket and it all slotted into place as I thought the dou miao was a rare and difficult vegetable to get and then I discovered it was plain old pea shoots! Ouch!
1 pack/bag of pea shoots
5 cloves garlic
1 tbsp canola or peanut oil
1 tbs fish or soy sauce (optional)
1 tsp sesame oil to finish
Rinse the shoots in a colander and drain. Heat the oil in a wok and add garlic. Fry until aromatic but not burned. Add the pea shoots by handful, stir fry until just wilted. Add the soy or fish sauce at this stage if required. Sprinkle with sesame oil and serve as an accompaniment to a meal or with other vegetables and rice.
