Updating Vietnamese chicken and peanut stir-fry for Easter

I was looking for some inspiration and something quick to make after an apero in  the village, and decided to simply add blanched broccoli to my Vietnamese chicken and peanut stir-fry. Chuck it in, after you have cooked the chicken, together with all the other ingredients. This was the result and it was yummy. Total time about 15 minutes including chopping!

Sometimes it pays to re-visit the old recipes and I suggest you browse through the categories too as there are so many delights hidden on this site!
