After lots of rich food, we are all yearning for light and simple meals with a fresh taste. I urge you to look east…This has to be the easiest stir fry I’ve done in ages, and delicious in all its simplicity. Serve with noodles or red rice and some steamed vegetables.
Serves 2
2 tbsp coconut or groundnut oil
2 boneless chicken breasts, sliced
1.5 tbsp fish sauce
3 spring onions, sliced
1 large mild red chilli
1/2 cup roasted, unsalted peanuts
salt and pepper
Heat a wok over a high heat and when oil is hot ad chicken. Stir fry for about 4 minutes, until almost cooked through. Add fish sauce, spring onions, chilli and peanuts until all are nicely browned. Check seasoning, and serve.
Couldn’t be much simpler!
